Today I'm sharing my recipe for Avocado Salad Dressing with you, and I'll tell you a little bit about the book, The Maker's Diet Revolution by Jordan Rubin.
I started doing the first part of this diet last Monday, and I told you I would tell you about it. It has not been hard to do. The first 10 days is a cleanse, during which you eat: fruit, vegetables, nuts, and seeds. I have not had any meat, coffee, sweeteners, dairy, or salt in over a week, and I must tell you it has not be difficult. I would be lying if I told you I wasn't looking forward to Wednesday, when I get salmon for dinner, or Thursday when I get to start eating a more normal diet. I certainly am. I have been reading the cookbook that goes with the diet, planning my meals. It is a more natural diet, but it really will fit in with my everyday life. You are supposed to do a weekly cleanse day, and then redo the 10 day cleanse every 3 months, to detox your body. Sounds good to me. You are also supposed to spend some time reading the Bible everyday, which is not an issue for me either. I do that anyway. It has also been easier for me to do this last week, because I have still had so much to do in the house, and not having to prepare a meal has been a big help. Also, my sweet husband is not here right now, so he's not waiting for dinner every night.
I must say, this has really been easy, and I would recommend it if you are looking for some healthy changes in your eating habits. I have lost 11 pounds in the last 8 days. For me that is pretty amazing. I feel great, have had not caffeine withdrawal headaches, and have not any cravings or adverse effects.
The one thing that was a little difficult for me is not having oil or vinegar for salad dressing. I don't love plain salad with lemon, so they recommended making a dressing with avocado. There wasn't a recipe, just some suggestions, so this is the recipe I came up with for my Avocado Salad Dressing.
Avocado Salad Dressing
Ingredients:
1 avocado
1/3 piece of a roma tomato
1 slice red onion about 1/4 inch thick quartered
1 clove garlic
juice from 1/2 lemon
1/4 tsp Braggs Liquid Aminos (I'm not sure if it's allowed, but I needed something salty)
2 to 3 drops hot sauce
2 TB chives or green onions
1 tsp heaping my Mexican Rub
pepper to taste
1/4 cup water
Directions:
Put all of the ingredients in a blender or food processor and blend until smooth.
This makes enough for 1 salad for 1 person.
I have a Ninja blender and it works really well making this into a smooth salad dressing.
I hope that you like this salad dressing. If you are just making it as a dressing you can use salt and a little olive oil, but for The Maker's Diets this is a pretty good alternative to a regular salad dressing.
This is what my midday meal looks like. I normally eat the salad about 3:30 or 4:00 PM. Then for dinner at about 6:30 or 7:00 PM I have some fruit, dried plums, and some almonds and pumpkin seeds.
I will also be sharing how to soak seeds and nuts at some point this week. It's not hard! Really!!!
