Teriyaki Bacon Wrapped Salmon


For dinner tonight we are having Teriyaki Bacon Wrapped Salmon.  My mom was looking for a salmon recipe and I had just read one that was bacon wrapped and had a fruit chutney with it.  My mom and Charly made that recipe, and they didn't like it.  It didn't have enough flavor, apparently.  Charly suggested that it would be better marinated in teriyaki sauce, so that is how this recipe came to life.  It happened to be delicious, how could it not be when bacon is involved.


Teriyaki Bacon Wrapped Salmon

Ingredients:

4 4 oz salmon fillets about 1/2 inch thick
8 slices center cut bacon
1 16 oz bottle teriyaki sauce
1 tsp olive oil
toothpicks

Directions:

Put paper towels on a plate and put 4 slices of bacon on it and cook on high for 2 minutes.  Then repeat with the rest of the bacon.

Rinse the salmon and pat dry and season with salt and pepper.

Wrap 2 slices of bacon around each salmon fillet.

Put in a flat Tupperware or ziplock bag and pour teriyaki sauce over the filets

In a 12 inch skillet heat the olive oil and add the salmon wrapped bacon with the seam side down.

Cook for 6 minutes, then turn and cook for 6 to 8 more more minutes, or until bacon is crisp and salmon flakes.

Serves 4

We hope that you like this salmon recipe as much as we did.  It was delicious.
