Turtles for Valentine's Day


I made these Turtles for Valentine's Day, because they are both my mom's and Charly's favorites.  I found the recipe at If You Give a Blonde a Kitchen.  I love the name of her blog.  Anyway, these Turtles are delicious and very easy to make.  I did need to make a few adjustments to the recipe, because the caramel was a little too runny to work with.  I ended up adjusting the amount of milk that is added to the caramels, and that was much easier to work with.  I also used more chocolate, because we like to have most of the caramel inside the turtle.


Turtles

Ingredients:

3 oz pecan halves (60 pecan halves)
30 individually wrapped caramels (1 11 oz bag) (I used Werthers Chewy caramels, because I couldn't find Kraft, I don't know if that would make a difference with the addition of milk)
1 1/2 to 2 tsp milk
2 cups chocolate chips

Directions:

Line 2 cookie sheets with parchment paper.

Place 2 pecans halves next to each other, on the parchment paper and repeat this with the rest of the pecans.  You will have pecans for 30 turtles.

Unwrap the caramels and place them in a saucepan with the milk and stir over medium heat until melted and smooth.

Drop a teaspoon of caramel over each set of pecans.

I let them cool in the freezer for about 10 minutes.

Melt the chocolate in the microwave for 30 second intervals, stirring in between each 30 seconds, until the chocolate is melted and smooth.

Pull the pecan caramel pieces out of the freezer, they should be hard enough to work with now.

Drop a spoonful of chocolate on the second parchment lined cookie sheet and place a set of caramel/pecan pieces with the pecan side down onto the chocolate.

Repeat with the remaining caramel/pecan pieces.

Next, drop a spoonful of chocolate over the top of the turtle, leaving a little bit of the caramel showing.

Repeat with remaining turtles.

Once cool, you can place the turtles in paper liners and put in a pretty box to give as a gift.

This makes 30 Turtles.
