Taco Salads


I made these Taco Salads with leftover prime rib, and I must say, they were delicious.  I also got to try out my Tortilla Bake Pans for the bowls and that was fun. They really do work.  I don't know if any of you are like me, but I love seeing all of those as seen on TV things at the stores.  We are constantly looking at them to see what is new.  Anyway on to the recipe.


Taco Salads


Ingredients:

1/4 cup chili powder
1 tsp garlic powder
1 tsp ground cumin
1 tsp ground oregano
1 tsp salt
1/2 tsp ground black pepper
2 lbs cut up cooked beef cut up ( I used prime rib)
3 TB vegetable oil
4 flour tortillas ( I use low carb tortillas ) or already baked bowls

For salad
lettuce
cheese
guacamole
sour cream
salsa
Chipolte Ranch Dressing

Directions

Mix the chili powder, garlic powder,  cumin, oregano, salt, and pepper together in a bowl and set aside.

Put your oil in a frying pan and heat it over medium heat

Add your cut up beef and stir slightly, then stir in your spices.


Cook the meat in the spices for about 15 minutes.

Then remove from heat.

Then bake your tortilla bowls or 


Next put the meat in the bowls


And add the rest of the fixings to make the salad the way you want it.  I have given a few of the ingredients above that I like in  my salad.  (lettuce, cheddar cheese, guacamole, sour cream, and chipolte ranch dressing)

You are ready to go.


This makes 4 Taco Salads

Low Carb Crock Pot Pulled Pork


I make this Low Carb Crock Pot Pulled Pork and I love it.  It is really easy to make since you in the crock pot.  It's one of those meals that you can get ready in the morning and just leave for the day.  One of my favorite ways to cook.  I use my recipe for Low Carb Barbecue Sauce to make it low carb.  That way I have something delicious meal with out the sugar.



Low Carb Crock Pot Pulled Pork

1 3 lb pork shoulder roast
2 cups Low Carb Barbecue Sauce

Directions

Put your pork roast into the crock pot and cover with the barbecue sauce.

Cook on low for 8 hours

Next shred the pork with 2 forks in crock pot with sauce.

Serve on a bun with additional sauce

Cranberry Lychee Martini for Friday's Happy Hour


I made this Cranberry Lychee martini at my cousins house at Christmas time.  We went to a huge Christmas Party at my cousin Patty's house, and it was so much fun.  I got to see my mom's side of the family, and they certainly know how to through a party.  It was fun seeing all of my cousins, but especially my Aunt Celia (90), My Uncle Ed (94), and my Uncle Ralph (92).  They are so cute and so sweet.  They were telling all kinds of stories about when they were kids growing up in Cleveland, and then moving to California.  I love old family stories.  

Anyway on to our drink of the day.  My cousin had a Lychee Vodka, so we experimented and this drink was delicious.

Cranberry Lychee Martini

Ingredients:

4 oz Kai Lychee Vodka
4 oz cranberry juice

Directions:

Add ice to a martini shaker, or a large glass

Add the vodka and cranberry juice to the martini shaker

Shake or stir well until well chilled.

Pour into 2 Martini Glasses and Serve.

I hope you enjoy this drink.  I have had a hard time finding the Kai Lychee Vodka in Denver, but if you  can find it, this is a great drink.  If you can't find it, you could do Lychee juice and cranberry juice as an alternative.  I always love hearing from you.
