Peanut Butter and Jelly Filled Cupcakes

Peanut Butter and Jelly Cupcakes were a real treat.  I was experimenting with different fillings for cupcakes and since Charly is pregnant and craving Goober Peanut Butter all the time, I thought I would try these for her. She said they were amazing.  They will make a really a special treat for your loved ones on Valentines Day.

Peanut Butter and Jelly Filled Cupcakes

1 box white cake mix
1 box vanilla instant pudding
3 eggs
1 cup water
1/4 cup vegetable oil
Goober Peanut Butter (it's the peanut butter and jelly together)
sprinkles

Frosting (I purchased these delicious Chocolate and Vanilla Whipped Icing from the Bakery at my local grocery store King Soopers.  It's what they use on their cakes)

Directions:

Preheat oven to 350 degrees.

line 2 dozen muffin cups and spray with nonstick cooking spray.

Mix cake mix and instant pudding together.

Then add eggs, water, and oil.

Mix on low for a minute to get started, and then turn to medium high and mix until smooth.

Next fill each muffin cup 1/3 way with cupcake mix.

Then put 1 TB Goober Peanut Butter into each muffin cup.

Next cover the Goober with more cupcake mix until muffin cup is 3/4 full.

Bake for 18 to 22 minutes.

Then take from oven and cool on a rack for 15 minutes.  Then remove from muffin cups from pan and cool the rest of the way on the rack.

Once cool pipe icing on top of cupcakes, and then top with sprinkles.

I put these on a cake stand to serve.

I hope you like these cupcakes.  They came out so pretty and are a real treat for your loved ones. I always love hearing from you.

A Paloma for Friday's Happy Hour

I thought A Paloma for Friday's Happy Hour looked great for today.   I'm in Buenos Aires heading to the Antarctic, and this is a great refreshing warm weather drink before I head to the much colder 20 hour days of the Antarctic.  It's a simple recipe and the grapefruit juice is delicious in it.  Kind of a different take on a Greyhound.

A Paloma

Ingredients:

1/4 cup grapefruit juice
1  rib lime juice
1 tsp sugar
1/4 cup tequila
1/4 cup club soda
wedge of grapefruit
salt

Directions:

Rub grapefruit wedge around the rim of the glass.
Put salt on a plate and rim of the glass in the salt.

Pour the grapefruit juice, lemon juice, and the sugar in the glass and mix until the sugar disolves.
Next add the tequila and the club soda, stir and serve.

I hope you enjoy this great refreshing drink.  It's really delicious.  I always love hearing from you.

Enjoy!!!
