Polka Dot Cake




Charly made this Polka Dot Cake for vince's Birthday and not only was it good, but it came out so cute.  She saw a picture of one on Facebook and decided that she would make it for Vince's Birthday.  I love the way it came out, and it was pretty simple to make.  Just boxed cake mix and food coloring.


Charly's Polka Dot Cake

Ingredients:

1 box white cake mix (and ingredients called for on the box to make it)
1 Devils Food Cake Mix (and ingredients called for on the box to make it)
neon colors food coloring
cake pop pan
2 8 inch cake pans
non stick cooking spray
4 ramekins or bowls

Directions:

1.  Preheat your oven to 350 degrees and spray cake pop pan and cake pans.

2.  Follow the directions on the box for your white cake mix to mix the cake batter.

3.  Divide your cake batter into 4 bowls or ramekins.

4.  Add your neon colored food coloring to each ramekin, making each ramekin a different color.  Add the food coloring to make the cake pops the color that you want the polka dots to be.  She added a lot of food coloring to get them to these really bright colors.

5.  Add the cake batter to your cake pop pan.

6.  Bake for 17 minutes.  It's okay if they are not totally done, they will finish cooking when you bake them in the cake.

7.  While the cake pops are baking follow the directions on your devils food cake mix package to make the batter for the devils food cake mix.

8.  Pour 1/2 of the devils food cake batter into your cake pans.

9.  Then pop your cake pops out of the pan and put 6 cake pops in each pan.  (if you decide to make a second batch of cake pops, you could add more cake pops to the cakes)

10.  Pour the 2nd half of the cake mix over the cake pops.

11.  Follow the directions on the box to bake your cake layers.

12.  Once a toothpick comes out clean remove the cakes from the oven and cool on racks for 15 minutes.

13.  Then remove the cakes from the cake pans and finish cooling.

14.  Frost with any frosting you want.  We used the Peanut Butter Icing that we used on our Peanut Butter Brownie Cupcakes but we doubled the batch of icing.  The recipe below is the single batch, which you will need to double.


Here is the Peanut Butter Icing Recipe.

Kathleen's Peanut Butter Icing

Ingredients:

1 cup powdered sugar
1 cup peanut butter
5 TB unsalted butter at room temperature
1 tsp vanilla extract
1/4 tsp Kosher salt
1/3 cup heavy cream

Directions:

1.  Mix powdered sugar, peanut butter, butter, vanilla, and salt in a mixing bowl on medium-low until creamy.  Scrape down the sides as necessary.

2.  Then add cream and beat on high until smooth.  I did need to add an extra TB of cream, so that it was creamy enough to frost the cake.  This frosting is a little difficult to work with on a cake,  I had to pat it on.  It may be easier to pipe on the cake, you could try that if you prefer.
