Chocolate Bailey's Cupcakes Push-ups


Charly and I made these really cute Chocolate Bailey's Cupcakes Push-ups and they were delicious.  Charly came up with the idea when we were brainstorming our posts for the next month.  We did run into a problem with our white butter cream frosting (it was homemade and horrible too sweet), so we ended up buying a green whipped icing from our local grocery store's bakery (King Soopers)  We will work on a good frosting recipe another day.

This is another easy, semi homemade recipe, and I think all of you are going to love it.


Chocolate Bailey's Cupcakes Push-ups

Ingredients

1 box devils food cake mix
1 cup Bailey's Irish Cream or Bailey's Irish Cream Original Coffee Creamer
1/2 cup oil
3 eggs

Large Pastry Bag of Green Whipped Icing  ( 3 to 4 cups) ( we used store bought frosting from the bakery at our local grocery store.  King Soopers.)
12 Wilton Push-up containers (I found these at Michaels)
Decorations (we added little beer mug decorations)


Directions:

Preheat oven to 350 degrees and spray a 2 count mini muffin pan with non stick cooking spray.

Mix cake mix, Bailey's Irish Cream, oil, and eggs on low for two minutes and then beat on medium until smooth.

We used a small cookie scooper and filled the muffin cups about 2/3's full. 

Put in oven and bake for 10 to 12 minutes.  Toothpick will come out clean.

This made 2 full trays and 8 in the last tray.

Remove the muffins from the pan and let totally cool before cutting and frosting.

Set up your Push-up containers in lids in order to start filling them.

Next you will need to cut your cupcake tops off.  You need just the bottom part of the cupcakes, because it need to be flat for the Push-up container and the frosting.

Start by putting 1 muffin in the bottom of each of the 12 Push-ups.

Next pipe frosting on top of the cupcake.

You will need to repeat the cupcake and frosting layers two more times ending with frosting on the top.  Pipe the frosting decoratively on the last layer.  

Next, put whatever little decorations on top that you want to use.

Makes 12 servings.


I think these little Chocolate Bailey's Cupcake Push-ups came out so cute.  Charly really did a great job.  We always love hearing from you.

  5. Is it to early in the morning to be thinking about Baileys? No I dont think so! These look delicious and would be perfect right about now with my morning coffee :D I like how you can see them through the glass they would make a sweet morning tea or night time dessert
