Pecan Tartlets for Retro Recipe Saturdays

I made these Pecan Tartlets at my daughter, Charly's, request.  I used the regular recipe for Pecan Pie from the Karo Syrup label, but used puff pastry for the crust instead of pie crust.  They were delicious and very easy to make.

Pecan Tartlets

Ingredients:

I Cup Karo Syrup ( dark corn syrup)
3 eggs
1 cup sugar
2 TB melted butter
1 tsp vanilla
1 1/2 cup pecans
2 sheets puff pastry rolled out (cut each sheet into 4 squares.)

Directions:

Preheat oven to 350 degrees. Spray pan with nonstick cooking spray.

Put 1 puff pastry square into each section in your mini tart pan  sections.  I had to use two mini tart pans, since mine only have 6 squares, but you could use ramekins or even large muffin pans if necessary.  You would need to adjust cooking times if you are using something deeper then the tart pan

Mix syrup, eggs, sugar, butter, and vanilla in a large bowl.  

Next add the pecans, mix well.

Pour into each puff pastry.

Cook for 30 to 40 minutes or until internal temperature is 200 degrees.  The center top should spring back when touched, when it is done.

Makes 8 tartlets


I wish I had a larger picture of them done, but like usual I forgot to get a picture of the tarlets alone. ( this was our brined turkey from Thanksgiving.)

A Snuggler for Friday's Happy Hour


Today we are having a drink called A Snuggler for Friday's Happy Hour.  The first time I ever had one was skiing in Snowmass, Colorado in the late 70's, and it was delicious.  This is one of those drinks that is great when it's cold outside.  It is Hot Chocolate with Peppermint Schnapps, which is so easy to make.

So here it is:





A Snuggler

Ingredients:


2 cups milk
4 TB chocolate syrup
3 oz peppermint schnapps
Whipped Cream
Crushed Peppermint Candy

Directions:

Heat milk and chocolate until hot, but not boiling.

Pour into 2 mugs.

Add 1 1/2 oz peppermint schnapps to each cup.

Add whipping cream on top of the hot chocolate and garnish with crushed peppermint candy.

Serves 2

Foolproof Prime Rib


HI, I'm Charly, and today is my first day working with my mom at Adorned From Above.  Today I am sharing a recipe for Foolproof Prime Rib, that I made a few weeks ago,

First I want to tell you a little bit about myself.  I worked as a paralegal for several years, and right now I am taking some time off to decide what I might like to do with my life.  My mom came to me some time ago, asking if I would help her with her blog, and I recently decided that I would like to give blogging a try.  

My mom spends so much time on the blog that she doesn't have time for much else, so I am going help in several different areas of the blog.  I will be sharing her posts at parties, and helping comment on all of your posts at her parties.  With 200+ links each week, it has gotten a little difficult for her to comment on each post by herself.  I will also be sharing some of the things that I enjoy doing with all of you, like recipes, beading, and some helpful hints for around the house.  I'm a little OCD, so there will be projects about organization, cleaning and other things like that.  

I am looking forward to getting to know all of you, and for all of you to get to know me.

Now on to the recipe for Foolproof Prime Rib.  A friend was staying with us a few weeks ago, and bought us this beautiful Prime Rib Roast.  I had never made a prime rib before, and was very nervous since it was a $60.00 piece of meat, I figured I would find a recipe over the internet.  There were several, and I found this one at Allrecipes.com.   I made it and it came out delicious, so I decided to share it here with you.  I adapted my seasonings to this from the original recipe, but I have posted a link to the original recipe.  So here it is, my Foolproof Prime Rib.





Foolproof Prime Rib

Ingredients:

5 lb Prime Rib
1 tsp sea salt
1 tsp lawry's Season Salt
1 tsp Montreal Steak Seasoning
1 tsp garlic powder
1 tsp pepper

Directions:

Preheat oven to 375 degrees.  

Line a roasting pan with heavy duty foil and spray foil and a roasting rack with non stick cooking spray.

Put the prime rib on the rack with fat side up and rub seasonings all over the top and sides of the prime rib.

Cook for 1 hour. 

Then turn the oven off and let the prime rib sit in the oven without opening the door.

Let sit in oven for 3 hours.  

Then turn the oven on to 375 degrees and cook for another 1 hour, or until the meat reaches an internal temperature of 145 degrees.

Remove from oven and let sit for 10 minutes before cutting the meat.

Cut the meat and serve.

Serves 6 to 8 

Sorry that it is still in the pan, but when I took the picture I hadn't thought about blogging about it.  I just sent this picture to my Mom, because it looked so good.
