Navy Bean Soup
I love fall. Last week we had a cold spell, and I was on a roll making our favorite soups. One of my favorites is Navy Bean Soup. I love it's rich hearty flavor, it is a really stick to your ribs kind of soup. So here is the recipe for Navy Bean Soup, may it make you feel as warm and satisfied as we feel when we eat it. Oh and it is really great with cornbread.
Navy Bean Soup
Ingredients:
1 lb navy beans
1 1/2 lbs ham cut into cubes
3 to 4 ham hocks
1/2 onion chopped
2 TB olive oil
1/2 salt
1/8 tsp pepper
1 bay leaf
10 cups water
Directions:
Heat olive oil and saute onion in the olive oil until translucent.
Then add the navy beans, ham, ham hocks, water, salt, pepper, and bay leaf.
Cook covered for 3 to 4 hours, until the beans are soft and thick. The way you see it in the picture above.
Serve with cornbread.
Serves 4 to 6 hefty sized portions.

I love navy bean soup, my Mom used to make it on Friday's for us during lent. One trick she did was to "thicken" her soup with mashed potatoes. It was so yummy! This sounds like a great soup. Thanks for sharing your inspiration with Sunday’s Best – you helped make the party a success!
