Matzo Ball Soup for Recipe for Retro Recipe Saturday



 Tomorrow night is the first night of Rosh Hashanah.  So in honor of the Jewish New Year, I am posting a recipe for Matzo Ball Soup.  It is a favorite in our house, and I hope that all of you like it too. 

Mazto Ball Soup

2 3/4cups Matzo meal
11 eggs beaten
3/4 cup shortening melted
3/4 cup water or broth
1 1/2 tsp salt
2 large boxes chicken broth ( I use the low sodium / fat free broth)

Direction:

Mix matzo meal in a large bowl.

Mix shortening, eggs, salt and pepper.  Next add broth.

Add to Matzo meal and mix well.  

Refrigerate for 30 minutes to 1 hour.

Bring a large pot of water to a boil over high heat.

I always get my hands wet to work with the matzo balls.   I like my matzo balls bigger, so I use a large spoon and form a ball about 2 inches in diameter with my hands.  I also try to make as many of the matzo balls as I can first before putting them in the boiling water.

Once matzo balls are made, drop them gently in the pot and bring  them to a boil.  Then turn the heat to simmer and cook for  30 minutes with the pan covered.


In a separate pan bring chicken broth to a boil.

Once done, add the matzo balls to the chicken broth.  You can keep them hot on simmer until you are ready to serve.

Serves 8 to 10 for a meal, or 12 to 16 for a starter.
