This recipe for Sauteed Corn with Bacon came out super delicious. Charly makes a similar recipe with brussel sprouts and bacon, and I had seen some fresh corn recipes, and decided to combine a few recipes. This delicious Sauteed Corn with Bacon is the result, and I think that you are going to like it. What a great side dish to give Dad for Father's Day.
Sauteed Corn With Bacon for Father's Day
Ingredients:
6 ears of fresh corn
5 slices thick cut bacon
1 /4 onion chopped
3 TB fresh chopped parsley
Directions
Cut the corn off of the cobs and put in a bowl and set aside.
Chop your bacon, I slice in in half lengthwise and then cut it into 1/2 pieces. (I separate the slices before cutting and then just lay them back together when I am ready to cut it. It helps the pieces to separate easier when cooking.)
Start preheating a large skillet and then add your bacon. Cook bacon until lightly browned.
Then add the onions and cook until soft and translucent over medium heat.
Then add the corn and parsley and cook over medium heat stirring every few minutes.
Next, turn you heat down to low, and put a lid on the pan, so that you are steaming the corn.
Steam the corn for about 8 minutes or until cooked. (tender but still a little crispy)
Serves 4 to 6
