These Peanut Butter Brownie Cupcakes are delicious. My Aunt Laura made them a few years ago, and they were so good that I decided to make them for Charly's birthday. She does not normally like frosting, but she liked this frosting. It is a really simple recipe and the frosting is to die for. The cupcake recipe is from Paula Deen on the Food Network and the frosting is from The Barefoot Contessa at Home CookbooK. (page 188)
Peanut Butter Brownie Cupcakes with Peanut Butter Frosting
Ingredients:
1 18 1/2 oz Brownie Mix
1 bag peanut butter and Milk Chocolate Chips
Directions:
Preheat oven to 350 degrees. Line 18 muffin cups with paper liners and spray with non stick cooking spray
Make brownie mix according to the directions on the box.
Then fill muffin cups 1/2 full with brownie batter.
Then add 1 Tb peanut butter and milk chocolate chips on top of brownie batter
Next press chips into brownie batter until the batter comes to the top of the muffin cups.
Bake for 18 to 20 minutes or until center is firm.
Cool brownies on a rack for 10 minutes and then take them out of the muffin pan and cool an a rack totally before frosting.
Kathleen's Peanut Butter Icing
Ingredients:
1 cup powdered sugar
1 cup peanut butter
5 TB unsalted butter at room temperature
1 tsp vanilla extract
1/4 tsp Kosher salt
1/3 cup heavy cream
Directions:
Mix powdered sugar, peanut butter, butter, vanilla, and salt in a mixing bowl on medium-low until creamy. Scrape down the sides as necessary.
Then add cream and beat on high until smooth. I did need to add an extra TB of cream, so that it was creamy enough to frost the cupcakes.
Put into a frosting bag with a star attachment and pipe frosting on the cupcakes.
If you don't have frosting bags, you can just pipe it out of a ziploc bag or spread it on the cupcakes with a knife.
